    I added 1 can of drained pinto beans instead of rice &. It was fantastic! Next time my boys want to also add corn too

    Amazing flavor...throwing in the lime halves really took a simple recipe over the top. I added extra cumin, and served my rice atop of the stew, like gumbo. This recipe will be in heavy rotation at our house!

    Fabulous! Even my 10 year old loved it! I used brown rice and crumbled good quality tortilla chips over the top. Super easy, too! Can't wait to make again!

    Really good and easy! I used 4 cups of stock--it was pretty chunky. I also used brown rice and jarred peppers instead of fresh--seemed to work quite well and I didn't have to chop! I didn't have a shallot, but a regular onion worked well--also used lemon juice because I forgot to buy a lime. I tossed in frozen chicken breasts and let them cook in the broth--took a lot longer but I had time. Pulled them out and shredded by hand. Bit hit all around--lots of flavor and very filling. Will definitely make again. The sour cream on top was a must!

    this recipe reminded me of aformer mexican restaurant that served a seafood soup. the base was chicken stock w/out tomatoes, but came with chopped jalapenos, scallions, & cilantro. So... I too used chicken broth, added one can (16 oz of tomatoes, chopped broccoli, a can of corn, and canned jalapenos, with extra cumin. GOOD!

    i just made this for the first time today. excellent! i didnt add the rice because im not a big rice fan. but i could eat this ALL DAY LONG. im on my second bowl now. crumbled a little tortilla chips on top for some crunch. wow delicious

    Love this recipe, I brought a cooked chicken from Ralphs and usesd that. The lime was to strong in the stew. Next time will not leave the lime halves in the stew. I also used Brown rice instead of white rice, otherwise, great recipe.
