Ingredients

  • 7 1/2 ounces bittersweet chocolate, coarsely chopped
  • 11 tablespoons unsalted butter
  • 3 large eggs
  • 3 large egg yolks
  • 1/4 cup plus 2 tablespoons granulated sugar
  • 5 tablespoons all-purpose flour

Directions

Preheat oven to 350 degrees F. Butter and flour 6 (6-ounce) ramekins.

Place 5 1/2 ounces of the chocolate and the butter in the top of a double boiler, and melt them over simmering water.

Using a mixer with a whisk attachment, beat the eggs, egg yolks and sugar together until pale and thick, about 8 minutes. Reduce speed and add flour. Add the chocolate mixture and continue beating until glossy, about another 5 minutes.

Divide half the mixture into the ramekins. Divide the remaining chopped chocolate among the ramekins, making a little pile in the middle of each one. Top with the rest of the batter.

Bake until just set around the edges, but the center still jiggles. About 12 minutes. DO NOT overcook.

Cool just a few minutes and unmold each cake onto a plate.

    This is a great recipe. Do not over cook! Otherwise, you won't get the gooey center and the cake will be dry.

    We've made this a hundred times because it is so easy and so good. And we usually have all the ingredients. Follow the recipe... exactly. Even though you think it is under cooked it is usually perfect. When we've let it go a couple minutes longer it ended up too much like spongecake.Read more

    By accident I mixed 7 1/2 ounces of chocolate with 11 tbls. butter without realizing that you used some of the chocolate as... the "center". They took 20 minutes to bake, and then they fell apart :( But they still tasted lovely! I know it's my mistake so I'm not taking points off of Dave's recipe. Couldn't have been easier AND cheaper :)Read more
