This is a great weekday meal. Hearty, easy and delicious. Luckily, I had some spinach in the fridge, because it added another welcome layer to the dish. I also had on hand a pot of steamed rice. My kids loved it so much, they took some to school for lunch the next day.

This is quick, easy and can be made with what you have on hand - except for the spinach. While I questioned the spinach at first I think it really adds to the soup.

This is a great soup, different , easy and delicious. Very few people have enough beans in their diet, experts say we should have them 4 times a week. So try this, it freezes well also.

Found this in a search for chickpeas and spinach. In one of the amazing culinary miracles, I had all the ingredients on hand. It took way less than an hour. I'd say about 30 min. max.
Like several others, I added more veggies- cauliflower, celery and carrot. Didn't mess with the spices. Awesome. The perfect quick but satisfying dish for a rainy night.

I wanted to make some kind of curried chick pea soup and came across this recipe. I added Garam Masala and some curry powder as well. I didn't use spinach, either. At the end, I used my immersion blender just a little bit to give it a little creaminess. I can't wait to have it for lunch!!! It was very easy-I will definitely make it again.

I made this for my friends, some are vegan and the rest are meat eaters. EVERYONE loved this soup! It is so hearty and easy to double up! When I make it again, the only thing I will do differently is use a heavier green such as kale or chard.

This soup was amazing, and hearty. And even more, it's beautiful! I added a couple carrots, a braised and shredded cornish hen and doubled the cayenne for kicks. I will certainly make this again!
