I use cream cheese instead of ricotta. I have found that the flavors of the bacon and dates overwhelm the taste of the cheese. It is just nice to have any cheese in the middle for that smooth creamy consistency. I warm up the cream cheese so it flows through the nozzle of the icing bag easily. Also I get thick sliced bacon and have found I can wrap three dates with one slice of bacon - saves me enough bacon to have in the morning! Great recipe. Made them today and put in a zip lock baggie and threw it in the fridge. Will take it out and cook prior to the Christmas Eve get together. Yum!

SO good, and SO easy and quick to make that I basically pop some in the oven whenever I want.

I have never even tried a date before this recipe and decided to give it a go as a Thanksgiving appetizer. It was so DELICIOUS and so simple. I will definitely make this again and my friends absolutely loved it.

I wanted to try something new and this ended up being awesome. When I was making them I thought no way - plain ricotta cheese and dates. The dates looked like cicadas :( but when they were all done - they were great!

This is always a hit at all my dinner parties and even at home to spice up a dinner. Sometimes I trade bacon for pancetta, and both are fabulous! Also to panther1coach_1824082, I've cooked then reheated, but it's slightly better if you have a toaster oven to warm them up on the lowest toast setting, and only til they are warm, not til it beeps.

I have made this before and we really love it but has anyone cooked them ahead and then just heated them up? 20 minutes in the oven in the middle of a party is a long time.

Every time I've made this as an appetizer they were a hit. Every one who said they don't like dates (because they never actually ate one changed their minds. But then again you can wrap anything in bacon and make it taste amazing.

I tried these for an appetizer for my Thanksgiving feast and everyone,...even my father-in-law who doesnt like bacon ( who doesnt like bacon?loved these and they disappeared quickly...What a combo of flavor from the saltiness of the bacon to the sweetness of the date then the creamy-ness of the cheese,,umm Yummo! I went with all ready pitted dates to save on time and that was the only thing I changed... These will now be a staple at any dinner party or holiday where appetizers are for sure!
