These are always a hit! When I am short on time, I skip the ricotta and just wrap the dates and they are still a crowd pleaser!

My guests were still drooling over these the next day and everybody wanted the recipe. I thought they were super easy to make. I'm not sue why they received an intermediate prep rating. I planned 2 per guest and that wasn't nearly enough!

These have been a family favorite for years. Delicious! And that vene though i do not like Bacon, dates or ricotta, but the combination is to die for! If you are not watching calories you can also put them in a pan with a little bit of oil. Yummy!

THESE ARE AMAZING!! After the glowing reviews (well, I must admit I only try the recipes where there are only 5-star reviews I have to agree. These were so easy to put together ( and I made them about 4 hours ahead of time!and were so delicious. A friend doesn't eat pork, so I omitted the bacon on 4 of the dates- she was upset I didn't make more plain ones ! Also, I really can't imagine using any dates but Medjool, simply for the reasons that Medjool dates are so dense and chewy, and the size of them is more impressive than other dates.

Instead of Ricotta, I used herb goat cheese to stuff the dates. mmmmm
When cooking the dates make sure you leave plenty of room inbetween each date. Also, when I put the dates in the oven , I put them on a cookie cooling rack and then on top of a liped baking sheet(to catch all of the grease. Worked great!
These were a great hit @ my super bowl party!!

Lordy, Dave! These were beyond excellent! I made them for a small dinner party on New Year's Eve and everyone (and I mean, EVERYONE FLIPPED over them! They were the hit of the party and trust me the rest of the food was good...I cooked for 2 days preparing it but these just stole the show.
Thanks for a great recipe!
