    These are great, but even better stuffed with half ricotta and half gorgonzola or a roquefort cheese. I've also wrapped them with prosciutto and put them on the grill - yum!

    I would never have thought to combine dates, ricotta, and bacon, but WOW! If you've never tried anything like these before, eat a couple. The first time I tasted one I wasn't sure. By the 4th one, they were my favorite. I couldn't find the right dates, but the smaller ones I substituted came pitted and worked just fine.

    We just had a big birthday party for several family members. I decided to try these tapas out. I desperately wish I had bought more bacon and dates so as to have an unending supply. These will certainly show up at many events to come!

    My family has served these as an appetizer for a dinner party and also have taken them to a reception. Everyone loved them and asked for the recipie. Very easy to make, although I liked the dates that I had to pit, rather than the pitted ones. I felt they were easier to fill.

    I had high hopes for this recipe but it just wasn't my thing. It was a lot of prep for something that was just ok...love the thought behind it but not worth the trouble.

    When I saw this on tv, I thought it looked very strange. I went online and read all the reviews. Everyone was saying that they were delicious. So, I made them and.....LOVED THEM. To make it alittle easier, I bought pitted dates. I split them apart and put the ricotta in the middle and then smooshed them back together...much easier.
