    I made this for a party. I was looking for a red dip and a green dip. This one was a hit. People were surprised that this was made with beets. Everyone loved it. The flavors meld very well. I will probably make it again this holiday season (if someone doesn't "beet" me to the punch. Haa Ha

    This recipie is nice, however I think the flavor of the goat cheese overwealms the beet flavor. Next time I would use less cheese.

    I served this with crackers instead of crostini, and it was a hit, even with those people who said they don't normally like beets.

    Having made this twice now, make sure you use fresh chives. The dried ones just don't pack the necessary punch.
