Delicious, tasty and healthy. The combination of the beets and the grapefruit works perfectly! If you don't have the alfalfa sprouts it's also very nice with arugula.

As my unsuspecting dinner guest said "I would never think to put all those things together, but wow! is that great! If it wasn't so filling, I could've had another bowl."
And I agree, which is a pretty big compliment, considering I've never liked beets before.

I almost didn't try this salad because it seemed too "out there" but decided that I've been too save and if Dave had it as part of the menu I shoud give it shot. I am so glad I/we did...we loved it. It was unique, tasty and interesting. I'll do it again!

I love beets but found this uninspiring. The dressing was very thin and watery. Perhaps my grapefruit produced more juice than necessary

The grapefruit gives an interesting flavor, and the alfalfa are definitely interesting for texture. Good healthy salad.
