Shaved Fennel and Green Apple Salad with Orange Dressing and Ricotta Salata

Ingredients
  • Dressing:
  • 1/3 cup olive oil
  • 1 large shallot, minced
  • 2 navel oranges, juiced
  • 1/2 navel orange, zested
  • 1 small lemon, juiced
  • 2 teaspoons Dijon mustard
  • Couple pinches salt
  • About 15 to 20 grinds black pepper
  • Salad:
  • 1 bulb fennel, shaved with a knife or mandoline (about 2 to 3 cups), fronds reserved and chopped
  • 1 Granny Smith apple, peeled, cored and sliced into 1/8-inch thick slices, then cut into matchsticks
  • 1/4 -pound ricotta salata, shaved
Directions

Combine dressing ingredients in a sealable container and shake to emulsify.

Combine shaved fennel, some of the fronds, and apple in a mixing bowl and toss. Toss the salad with the dressing. Distribute between serving plates. Top with shaved cheese and scatter a few more chopped fennel fronds over the top. Serve immediately.

    This a fantastic salad, I sometimes make just the dressing for regular salads as well. Everytime I make this for guests they love it and want the recipe.
    Love this recipe because I am on an anticoagulant and am having to find alternatives to dark leafy green salads. It does make a lot but holds pretty well until the next day and dressing lasts several days if refrigerated. I added shaved raw turnip and currants to it for variety. Very refreshing!
    I hate the taste of black licorice, so I was hesitant to try this recipe. I'm glad that I did because I really liked it. I don't know if the bulb I bought, wasn't and strong as normal or what, but the salad had a really nice flavor. My only complaint, is that the dressing proportions made enough for three salads. I don't know what size oranges David used, but the ones from my tree are huge and juicy, so I only used one and still had enough left for 2 additional salads. Prep time was a breeze, I used the mandolin for the apple and fennel.

    Love this salad! Is very refreshing in the summer and easy to put together quickly. A great alternative to traditional salads you see at BBQ's. Flavors between the orange, fennel, and green apple are really well balanced.
    I always enjoy Dave and during this episode thought, "I HAVE to make this meal." Unfortunately, I was not impressed with the salad. I followed the directions to a T, however felt it was a little too bitter and overpowering. My husband said the shallots were too much for him and he overall did not like it. I don't believe I will make this, or any rendition of this. Perhaps, I am not a fennel woman.
    This was the first time I have made something with fennel in it and what an easy one to make. The only negative thing I can say is the prep time is a little long but it is well worth it. The combination of the fennel with the orange dressing is so sweet and delicious you and your guest will love it!

    This is a wonderful summer salad. It is light and delicious and very healthy. I have made it several times. If i don't have the cheese in the house I omit it without compromising the dish at all.

    What a crisp refreshing salad, the citrus dressing with the crunch and licorice flavor of fennel and slight tartness of the apple made this salad a nice change from the garden variety.
    I made this salad for a bunch of friends as a side dish for one of our Sunday get togethers - It goes great with burgers and ribs and clams and everything else we were serving and was a lot more interesting than the usual cole slaw or potato salad. I doubled the recipe and there was none left.
    A Blast of Freshness
    I knew I would love this, but couldn't believe my husband did too. I couldn't find the ricotta salata, but I didn't miss it as there was plenty of cheese in the rest of my meal.
    Easy to make and very delicious
    I LOVE this salad! I made it for some dinner guests, and they LOVED it! The dressing was so tangy and fresh tasting. I had never had Ricata Salata before, but it added the perfect touch to the salad. This salad is light, refreshing, different, and simply delicious! Thanks, Dave!
    I made this salad for company recently (as an accompaniment to a spicy pasta dish) and everyone LOVED it. The flavors blend wonderfully and even though I wondered whether everyone would like the fennel, it was a huge hit. My only suggestion would be to double the recipe as it makes a very small amount as is.
