    I thought this recipe would be a fun and easy way to eat more vegetables. However, the soup lacked flavor and the consistancy was not as smooth as I had hoped. I won't make this one again.

    I am really not a cauliflower person but I decided to try this since it has been awhile since I have tried cauliflower. It is very good. I was also happy to find this recipe since it's low carb.

    My son and I loved this soup. It's so
    easy to make and seems to be healthy.
    I added extra garlic & some crushed red
    pepper flakes (my son's idea. The parmesan crisps are a nice addition.
    I will definitely make it again.

    Creaming the cauliflower right in the pot after cooking gave this soup a very creamy texture. And, the flavor is really rich using the chicken broth instead of water. I tried it both ways to see the difference.

    I wasn't sure if the soup would be creamy enough, but follow the recipe exactly - and the consistency is perfect. I added a bit of cayenne pepper to give it more of a zip. Great w/the parmeasan crisps. Thanks for the recipe!

    I prepared this the first time about two months ago, and was really impressed. I am preparing it today as well with Christmas dinner. Even the picky folks in our family like this one.
