What a great mingling of flavors in this dish. I used brown rice, instead of Jasmine ('cause that's all we had, but it was great anyway; the lime and coconut milk dominate whatever rice you use anyway.
I also substituted mint for the basil and it added even more complexity to the dish than I believe basil would have. I almost skipped the mango salsa, because I was skeptical. I'm so glad I decided to go with it though; the dinner definitely wouldn't have been as good without it.
I used a pound of small shrimp too, instead of medium or jumbo and I thought that was the way to go. Just separate the shrimp from the liquid and cook on high for a couple of minutes, take the shrimp off, then thicken the marinade.
For the presentation I put a scoop of rice in the middle of a bowl, surrounded it with the baby shrimps, poured some sauce over it all, then topped the rice mound with the colorful mango salsa and put a couple of mint leaves in the corner as garnish. My dinner guests were mighty impressed with the entire meal. Mix it with a nice steely Chardonnay or a crisp Sauvignon Blanc and you're on your way.

I've been loving to experimenting w/new recipes as a newlywed, and this recipe ROCKS! =
I only added one jalapeno in case it got too spicy, but it was still packed with flavor! I agree that the rice is good as is if you want a very subtle taste, but would also be good with some lime juice & garlic & cilantro...I added that, and it gave it more flavor.
I added a little bit of shredded mint to the mango salsa & it went well with the basil! My mango wasn't ripe, so I added a little bit of honey powder too, and that made it yummier.
Thanks Dave for an awesome recipe that impressed my new hubby & his boss, who both gave me rave reviews!

I marinated the shrimp for about an hour. I will double the marinade next time because it makes an amazing sauce in the end. Everyone on the table enjoyed this dish!

My fiance made this for dinner last night and I just couldn't get over how much this dish was bursting with flavor. The mango was not yet ripe, we were kind of worried about that at first, but ended up adding a delightful tartness to the dish. As some have mentioned previously below, I would love to try this recipe using chicken, salmon, or tilapia. The jasmine rice was delicious, however, a bit on the heavy side.

My sister and I made this the other night and we could not stop telling each other how good it was. Made it with Rachael Ray's spicy radish and cucumber salad and Alton Brown's vanilla lime pineapple skewers as sides. SO GOOD.
