This is an amazing dish. My guests couldn't get enough of the shrimp. We even used the marinade on chicken later on in the bbq! Truly a delicious dish...

Who would have though that the mango salsa would go so well with that shrimp. I was skeptic about it after watching the show, but I tried it anyway and the flavors went very well together. I made a mistake with the rice so it didn?t come out right but. Next time I think I will try using aborro rice anyway. I used medium shrimp because the store only had medium and extra large unless I wanted to peel and devain them myself. I have a bad grader and grading ginger is hard with it (cut my knuckles in a few places so I found that using a garlic press works just fine or you can get ground ginger in a jar at the store but it isn?t as fresh.
