I've been making this recipe for two years, with both chicken and shrimp. I adore it, and it always gets raves.

The recipe never included cilantro, and rightly so, since cilantro is foul and tastes like soap. The basil is all it needs, although after reading reviews, I'll consider adding some mint next time.

This is a very tasty change of pace. I will make this again and again. The mango salsa really sets it off. At one time though, I think this recipe had cilantro instead of basil in the ingredients. I used the cilantro and it was wonderful. Has it since been updated/corrected?

I tried out this recipe on my husband and he loved it. Now he asks me to make it every once in a while. It's pretty easy to make also. The flavors go very well together. I add a little chopped cilatro to the rice to give it an extra kick.

This recipe was a huge hit with my family. Ive been asked to make it many times since we first tried it. I made a few small substitutions and additions though. I added chunked pineapple to the salsa and substituted sweet onion for the scallions to give it less of an onion flavor and more of a sweet flavor which offsets the heat from the shrimp beautifully. My mother-in-law hates spicy food but she loves this dish because of how well the salsa cools the heat. This is definately a keeper!

The first time I prepared this dish I accidentally bought condensed coconut instead of coconut milk. Without time to run back to the market, I heated it for a few seconds in the microwave to soften it, mixed it with milk, and used it in place of coconut milk. I tried the recipe again later and the rice was actually much better the first time. I'll make it that way every time.

I made this for a dinner party and I can't believe how awesome this turned out! Everyone loved it! I served it over orzo instead of the jasmine rice... holy cow.. it was great!

This summery recipe was SO easy--I can't emphasize the simplicity of the dish. I really impressed everyone that night--the salsa was the kicker and it couldn't have been easier.

I traded the shrimp for tilapia and it was excellent. Very anxious to try this on my supper club.

I have enjoyed this dish about a half dozen times. My family asked me yesterday why it was out of the dinner rotation. I realized that I had misplaced the recipe, when I went online to retrieve it I wanted to encourage others to try it.
