    I just made this cake for the first time with the following changes and it's delicious:
    used milk instead of water
    used 1c brown sugar, 1/4c sugar
    used only 1/2c oil
    used 1c chopped fresh pears instead of raisins
    used 1c coconut instead of nuts
    used 1tsp each of vanilla and coconut extract

    I then baked in a 6mini bundt cake pan and made almost 2 dozen mini muffins.
    Finished of with powdered sugar glaze and Voila!!! Delicious!!!
    I pack the mini muffins in my kid's lunches, will take mini bundt cakes to church group and can freeze whatever we don't eat quickly. If I make one large bundt cake, frequently it goes stale before we finish it. The mini bundt cakes are a great way to cut down on waste.

    you can't beat the simplicity! i added a teaspoon on vanilla extract, chopped walnuts, and topped it with a simple glaze made with dark rum, butter, and powdered sugar. tastes incredible!

    I have made this cake several times, substituting fresh cooked pumpkin for the sweet potato (picked too many pumpkins this October so I cooked and froze in 1 and 2C containers and it is always a huge hit. I am a personal cook for a group of 4 priests and they always enjoy this cake...I sometimes use a cream cheese frosting on top but it is equally delicious with a dusting of confectioners' sugar. And we have never encountered a bitter aftertaste....perhaps the reviewer who suggested walnuts can sometimes be bitter was right, or perhaps the nuts used were rancid.

    This cake is so delicious! It's perfect in fall and winter...or anytime! The first time I made it I did it without the glaze and my guests that were in town ate pieces for dessert and also for breakfast! Just wonderful!

    I love this cake and plan to make it again. I did do some research after seeing one reviewer complained of an aftertaste and found that walnuts are known to sometimes be bitter.

    This cake has a terrible flavor! I love to bake and I bake atleast one cake a week. This is the first time I've thrown a whole cake away. I don't know how this cake got a 5 star rating!

    extremely easy to make, delicious and the recipe can be tinkered with. even if you don't like sweet potatoes or raisins - it all compliments each other and is similar to carrot cake...but better!
