    I used this easy cookie recipe and substituted mint/choco chip icecream for the center. Everyone really enjoyed it.

    The vegetable shortening leaves a flat texture and mouth coating. Try Butter it gives a better taste and better texture.

    The cookies were thin and absolutely delicious. They'd really be good by themselves, but with your favorite ice cream, really any flavor, they were awesome.
