  • 3 drops coconut extract
  • 1 (6-ounce) container fat-free vanilla yogurt
  • Half a banana, sliced into coins
  • 1/4 cup chopped mango
  • 2 tablespoons fat-free whipped topping (from an aerosol canister), or more for optional topping
  • 1 teaspoon shredded sweetened coconut, toasted if desired

Directions

Cook's Note: For toasted coconut, just cook shredded coconut in a dry skillet until lightly browned.

Add coconut extract to yogurt and mix well.

Spoon half of the yogurt into a glass, and then top with half of the banana and half of the mango. Repeat layering with the remaining yogurt, banana, and mango.

Top with whipped topping (add an extra serving, if you like) and coconut shreds and enjoy!

I tried it out and thought it was scrumptious! The tropical flavors all twist in your mouth that it makes you want even more. To make it a little of my own, I added cinnamon on top. I served it to my parents and they loved it!

Nice and Refreshing. Very, very tropical tasting with the coconut flavoring and the mangoes, especially. I liked how the whipped cream was only five calories for two tablespoons. I also used greek yogurt which was only 70 calories for half a cup. This is much more filling than regular yogurt with fruit from a cup. Next time, I might add some splenda to sweeten it up a bit. I'm not a huge fan of plain flavored yogurt and it was a tiny bit too sour for me.
