    I found this recipe in Guy's "Diners, Drive-Ins and Dives" cookbook that I checked out at the library. I love pimento cheese and was intrigued by the "spicy" ingredients. We like all things spicy at our house. We LOVE this recipe. Yes, it's light on the mayonnaise, but that is not necessarily a bad thing. It just cuts the fat content a little bit and is a plus for folks who don't care for mayo. Also, if making a sandwich, it might not be as easy to spread on your bread, but once you take a bite, you will never miss the mayonnaise. There is a nice balance of flavors. If you're making the pimento cheese for folks who don't care for "heat," you could maybe sub Monteray Jack for Pepper Jack and maybe leave out the cayenne and hot sauce, however, I don't think it's "that" hot. I have a family member who cannot take heat, and she loves this recipe. Now I want to check out The Penguin restaurant the next time I go to Charlotte!

    This cheese is a very good one, and I've tried making LOTS of pimento cheese recipes! One suggestion for a festive look, add part pimientos and part canned, diced green chiles. Mmmmm.

    Made this tonight with one minor change. I added one clove of minced garlic instead of the granulated garlic and onion. Great flavor! Will make again!

    As one who has owned and cooked in my own restaurants, I always make interesting recipes as written then try a few modifications. They were left out the mayo added pickapepper sauce, 1/2 tsp, as well as 1 tbl WHITE worcestershire sauce and about 1/2 cup of beer. Prosess together , place in a crock, refrigerate and enjoy with crackers and an evening drink.

    This is a great pimento cheese recipe, and very easy to make.

    Two suggestions for possible modifications:

    1. With all that cheese, 2/3rds of a cup of mayonnaise left it a bit dry (to me. I added in about another 1/3rd of a cup and it made it a little creamier and easier to spread. I used low-fat mayo and it didn't negatively affect the taste at all.

    2. It has some kick to it from the pepper jack, the cayenne and the pepper sauce. I love the heat so it was fine by me, but if you have people who don't enjoy spicy stuff (and don't get me wrong, it's not TOO spicy, you might substitute some other cheese for at least some of the pepper jack and/or reduce or eliminate the cayenne and green pepper sauce.

    This was also my first time making pimento cheese, and this was super easy and delicious! I loved the extra spice from the pepper jack and the green sauce. I didn't have the granulated onion/garlic either, so just subbed double garlic powder. I cut the recipe in half and added a tad more mayo for a creamier spread. Will definitely make again!

    1st time making a homemade Pimento Cheese recipe and it came out great (even tho I didn't have either the granulated garlic or onion and used garlic powder/minced dry onion. I love/d the flavor. Hubby likes it, too, but says he would rather have it as a spread like we "used" to buy in the store. So I've researched some other recipes and will incorporiate/play with their ideas to try and get it more to his liking. I could care less, to tell the truth, as long as the flavor is there it's all good to me ;

    I don't understand how/why some ppl take the time to write a review if they aren't going to tell us why they don't like a recipe... That's no help to those who read them to see if the recipe is good or not -- Ya' know.

    I'm embarassed to admit that I live in Charlotte, NC and have never been to the Penguin! However, that's about to change if the rest of their food is anything like their pimento cheese recipe! Being from the North I've never been a pimento cheese fan - think plastic tubs of yucky cheese stuff slathered on celery - nasty! So when a friend finally got me to try pimento cheese at a restaurant in Columbia, SC I fell in love and now have a new addiction! When I decided to try making some at home I searched high and low for recipes, finally settling on this one from the Penguin.

    Pros - the flavors are great! I like spicy foods and the addition of the Pepper Jack kicks it up a notch. I'm not a mayo fan, but the amount in this recipe is enough to bind the mixture together but not too much to make it taste funny to my Miracle Whip-preferring taste buds. It's super easy to make - only a few ingredients, a little shredding and you've got amazing pimento cheese. I served it as an appetizer, pairing it with homemade baked pita chips - YUMMY!

    Cons - it calls for granulated garlic which I couldn't find, so had to substitute garlic powder instead. And believe it or not, pimentos are hard to find! I tried 2 grocery stores (Harris Teeter & Food Lion and neither had pimentos. I finally found them at Wal-Mart.

    All-in-all, if you like pimento cheese and like a little kick to your food, this is one great recipe!
