Ingredients

  • 7 cups cooked white and dark turkey meat, chopped
  • 2 cups lettuce, chopped
  • 1 cup tomatoes, chopped
  • 3 stalks celery, finely chopped
  • 3/4 teaspoon salt
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 cups mayonnaise

Directions

In a large bowl mix all ingredients together and serve.

    I don't cook turkey often, so the thought of throwing away more than half of one does not thrill me after spending much time... prep and cooking it. This recipe is a perfect resolution for a quick healthy meal (lunch or dinner). I have frozen the remainder of the turkey in small portions so that I can make more turkey salad later. Instead of mixing the tomato and lettuce in, I toasted a scali roll in the oven with a slice of provolone cheese. Then added the salad mix, lettuce and tomato to make a scrumptious sandwich. A half cup of mandarin oranges on the side with carrot stick made it a perfect meal. If you want to be bad . . . add chips of your choice instead of carrot sticks. LOL LOL!
