Yummy quick and easy. Used turkey from a roast I did and didn't know what to do with leftovers. Both my picky husband and 3GS old ate it right up.

So easy and simple but sooo good! Also good with cooked shrimp. Of course you can adjust the amount of shrimp. I added a teaspoon of lemon juice to the mayo for brightness. This salad, either with turkey or shrimp, needs to be eaten soon after mixing in the mayo or the texture of the lettuce changes.

I don't cook turkey often, so the thought of throwing away more than half of one does not thrill me after spending much time prep and cooking it. This recipe is a perfect resolution for a quick healthy meal (lunch or dinner. I have frozen the remainder of the turkey in small portions so that I can make more turkey salad later.
Instead of mixing the tomato and lettuce in, I toasted a scali roll in the oven with a slice of provolone cheese. Then added the salad mix, lettuce and tomato to make a scrumptious sandwich. A half cup of mandarin oranges on the side with carrot stick made it a perfect meal. If you want to be bad . . . add chips of your choice instead of carrot sticks. LOL LOL!
