    All I can say is OMG!! YUMMY!!!! It does take some time but it is SO worth it!!! WOW !!

    This was soooo good. It's time intensive to make the tomato and mango salsas but it's well worth it. We used this as a topping on steak tacos and added a little quest fresco. One of the best dishes we have tried in a long time. Make this now.

    as a short cut - i did not include the tomato or mango salsa. MY KIDS AND I COULD NOT GET ENOUGH OF THIS WONDERFUL ROASTED CORN SALAD. I'M GOING TO CONTINUE SERVING IT IN MY RESTAURANT!!!!.........WAITE, I DON'T HAVE A RESTAURANT...........WELL, IF I HAD A RESTAURANT, THIS WOULD BE ON THE MENU!!!!!

    What A HIT this was at Memorial Day at my daughter and son in law BBQ mama to be. She loved it. We all did. And the presentation is what caught my eye and the taste great. I added a little queso fresco as well.
