My family loved the chicken! I didn't have all the ingredients for the sauce, so I used balsamic vinegar in place of wine. It was still yummy. I made Parmesan polenta in place of the potatoes. Delicious!!!! Will make again!

I LOVE this recipe. I love most of Chef Robert's recipes, but this is probably my all-time favorite. It has found a regular place at my family table and it is the perfect company dish. I follow the recipe exactly, except that I omit the half and half from the egg wash. I just use eggs, because I find that makes the breading a little less soft and also helps it to stick better. I do make the tomato demi glace to go with the chicken, but I use my own, non-truffled mashed potatoes. This dish isn't difficult to make, and it tastes incredible!

I am a novice at cooking from recipe books or websites. However this was so easy to follow. My only problem was to get the chickeb with the bacon and the spinach to stay in a roll. I used toothpicks. I substituted the bacon for a store brand bacon and it was really good. I boiled the potatoes cut up in the red wine, tomatoe puree and the stock. In the end we all enjoyed it.
