Ingredients

  • 1 cup olive oil
  • 2 red onions, chopped fine
  • 6 cloves garlic, minced fine
  • 8 dozen mussels, debearded and well scrubbed
  • 2 cans beer (your choice)
  • 2 cups marinara sauce
  • 3 tablespoons kosher salt
  • 3 tablespoons cracked black pepper
  • 4 tablespoons Irvine Spice Supreme Salad and Pasta Mix Seasoning
  • 1/2 bunch basil leaves
  • 8 fresh finely chopped tomatoes

Directions

Heat oil in a large stockpot. Gently saute onions and garlic until golden brown, being careful not to burn them. Add mussels to pot along with beer, marinara sauce, salt, pepper, and pasta seasoning, and top off with fresh chopped tomatoes and fresh basil. Cover pot and simmer until mussels open. Remove mussels to serving platter, discarding any that do not open. Spoon sauce around mussels and put extra sauce in a serving bowl to be used for dipping crusty bread or serving over a side of pasta.

Turned out really good! I didn't use the spice mix though and I added a tad bit of red pepper flakes. Was really lovely with the beer. I usually use wine, but this worked great. Great flavor!! I served this at an italian dinner party and they were all scarfed up!

This recipe is VERY easy to follow and taste extremely good. Three of us finished it off quickly. I over-bought( 8 lbs worth mussels for three people. I recommend 6 lbs of mussels for 3 people. Usually the market sells it by a 2lb bag. I cooked with the recommended ingredients with 8 lbs and an extra two bottles of Hoegarden beer. I threw the fresh tomatoes and basil at the last 5 mins of the cooking. I also tried canned tomatoes, definitely go with the fresh tomatoes. Add alot of tomatoes, it tastes really good!! I couldn't find the pasta seasoning mix so I went with Mc Cormick's all purpose seasoning. Delicioso!! 5 STARS!!
