Ingredients

  • 2 pounds hot sausage
  • 2 pounds sweet sausage
  • 1/2 cup olive oil
  • 8 red onions, cut julienne
  • 6 garlic cloves, chopped
  • 4 red bell peppers, cut julienne
  • 4 green bell peppers, cut julienne
  • 1/2 bunch basil leaves, chopped
  • 1 bunch scallions, chopped

Directions

Place sausage on a hot grill and cook until done. This may take about 45 minutes.

Heat oil in a saute pan placed on grill. Add red onions, garlic, red bell peppers, and green bell peppers and cook until translucent. Add basil and scallions and cook for a few minutes. Once cooked, cut sausage into 2-inch long pieces, and arrange on serving platter with pepper and onion mixture. Serve with crusty bread or rolls.

    This recipe is delicious. The bell peppers are the key flavor. Recipe variation - I put the sausage into the tomato & pepper... mixture and cooked them until they were melt in your mouth tender.Read more

    Lots of prep work, but delicious. Great for a large group. I used sweet onions, but either should be fine.

    I almost wondered if I misread the recipe - we had enough for 10-12 people! I would cut the recipe in half if I do it again... for my family. It was delicious - love the combination of peppers and sausages to give it some different flavors. I added some angel hair pasta and some marinara sauce to go with this with the leftovers instead of serving with rolls.Read more
