The soup was good but for me and my family it needs a little tweaking. I served it with shredded cheese which helped but I think it needs a little more flavor. It is still a keeper thou.

To make it REALLY special, add a couple cloves of garlic and basil and oregano to taste. Also get a GOOD quality boullion.

MIL prepared this soup on Sat evening and immediately apologized for not blending it. But it was a hit! No need for the immersion blender. The chunks of broccoli and carrot added much needed texture to the soup. The croutons were divine. Highly recommended and even my husband, who does not like cream based soups, enjoyed this immensely. Thank you Neelys! Will be preparing in the near future.

This was the first time I made broccoli soup. I added chopped garlic and more carrots into the soup. It was easier to make than I thought. My son loved it and had two bowls of it, then another bowl an hour later! This was the first time we had broccoli soup. It was delicious!!! The croutons were just as yummy. I would only bake them for 10 minutes till it's slightly golden brown. I shared the soup with my friend and her family loved it as well. This is definitely a dish we will be making again.

This is so flavorful and so much better than what I even had expected. I made this with light margerine and added a few cloves of garlic to the veggies. I also used half & half, so I didn't feel guilty adding some cheese too! I don't have an immersion blender, and didn't really want to mess with putting the soup into the blender, so I just used a potato masher. It was a little chunky -- but I loved it that way. And the croutons were awesome! My kids loved it too. Thanks to the Neelys for this recipe!!! I loved this whole episode actually as they made "something out of nothing" the whole show-- that came in VERY handy on a week where our budget was a little crunched. We stayed in our budget and ate healthful food at the same time. I'll definately be using this again!!

I was inspired by watching this recipe the other day. The hand held blender idea was such a snap! I changed it up a bit by using bacon in the beginning for my "butter" and instead of cream at the end I added velveeta and gouda cheese....yummy, yummy and just in time for lunch!

Easy to prepare, very flavorful. I even used margarine and fat free half and half and it was still delicious.

this was very easy and tasty. it will definitely become one of my go-to soups. after reading some of the reviews, i made a few minor changes. i added minced garlic, a little herb de provence, and used light cream. the croutons really perfected the soup.
