Simply one of the best soups to date. The only thing I did different the second time I made it was strain out some of the broccoli before using my stick blender. Once the desired consistency was reached, I simply added the broccoli back to the soup to give it a little more texture. Set the table with cheese, salt and pepper and watch the bowls empty. The Neelys are one of the best Food Network has to offer. By the way, if you need a variation on serving green beans, try the Neelys fried green bean recipe.

THIS WAS REALLY GOOD. THE ONLY THING THAT MIGHT MAKE IT BETTER WOULD BE ADDING SOME NICE SMOKY HAM CHUNKS. THE RECIPE SAYS TO SIMMER UNCOVERED, ADD CREAM, PUREE, THEN "REPLACE" THE LID BACK ON THE PAN. I SIMMERED IT COVERED BECAUSE I THOUGHT THE STOCK WOULD COOK OFF OTHERWISE AND IT CAME OUT PERFECTLY. NO ONE ELSE HAS MENTIONED THIS SO I'M A LITTLE CURIOUS. ANYWAY, I USED FAT FREE HALF AND HALF AND IT'S GREAT.

This was an absolute cinch to make. As a grown up who still isn't fond of chomping down on cooked veggies (prefer salads, this is a great way for me to get my broccoli in. It really does need a kick. We, like other reviewers, added salt and cheddar.

The heading says it all. This recipe was a cinch to prepare, but it definitely needed a kick. I added lemon juice to mine, and a handful of cheddar cheese at the end, but if I make this again, would also try adding garlic at the beginning. It IS a good base for getting creative.

I loved this soup, the only thing i did different was I added about 1 cup of mild cheddar cheese at the end. It gave it that extra needed taste. Oh also make sure you add 2 lg. cloves of garlic in the beginning with the other veggies.

We simply don't eat enough vegetables and with a skinny 11 year old in a fast food nation I am always looking for ways to add vegetables to all of our diets. This was great and incredibly easy. I did not have enough chicken broth but suplemented wiith water so I would imagine it would be richer with the full amount. I don;t like cream so I used 2% evaporated milk and 2% regular milk. It still tasted very rich.
This is not the best soup iin the world, but for a quick addition to dinner or lunch it can't be beat. IIf you are looking for a good solid soup with high vegetable then give it a try. Even better the second day.

Fantastic soup!
We added a cubed potatoe at the same time as the Broccoli. This provided a great subsitute for the cream (with the starch.

I love this soup! It is so easy to make and it allows my family to get their veggies in! I added a little mince garlic to give it more flavor. I also didn't have an immersion blender and had to use a regular blender. It still came out great. I added a little shredded cheddar on the top and it was perfect. I just finished making it and will be having it for lunch tomorrow!

I followed the recipe as directed but found it to be way too thick. I ended up adding an additional 1/2 cup of cream but that didn't help either. Although everyone at home said they would be willing to eat it again (but not often, we all expected more from it. It was missing something. I will continue my search for a better recipe. Thanks anyway.
