    My husband brought home a HUGE bunch of broccoli and I didn't want it to spoil before I had a chance to use it all. So, found this recipe for broccoli soup. What a GREAT way to use the stems of the broccoli, which I hate to admit, usually end up in the trash. Just peeled, chopped and used them in addition to some of the florets. Delicious, quick and so very simple. Next time I would probably use more broccoli. Definitely a keeper.

    Delicious! I needed a recipe that was simple so I could test out a new immersion blender. The first time I followed the recipe almost exactly (coconut flour instead of regular and extra frozen broccoli and it was amazing. Today I made a batch with garlic, shallot, and mascarpone cheese instead of cream, topped with turkey bacon bits and croutons made from bits of whole wheat roll toasted in the same pan as the bacon. Incredibly satisfying!
    Definitely a great recipe to use as is or with some miscellaneous vegetables. And it freezes well. Couldn't ask for more!

    I added some potato, and omited the cream. Delicious! As usual a Neely recipe turns out amazing! Their soups are especially phenomenal. Their spicy black bean soup is the best soup I have ever made.

    Had to join food network just to review this recipe and hopefully,many more to come.so i altered this recipe.added broccoli,3 baby carrots,few chunks of sweet potatoes, red bell pepper,sweet peas and onions. Sauteed it with some olive oil and 2 teaspoons of butter for about 5minutes and added some chicken stock and let it simmer. Forgot to add flour but didn't have any so I used about a teaspoon of cornstarch flour and added some garlic powder and black pepper. Blended with my magic bullet and topped up with quinoa. Simply YUM!

    This soup is so delicious. The croutons are a must. Together it is the best broccoli soup I have ever had. I can't wait to make another batch.

    Easy and excellent recipe. This is a keeper, and has most things I always have at home at any time. Good for a quick lunch or dinner.

    Wonderful. I made with almond milk (lactose issues and added a little cayenne (we like a kick. Will share and make often.

    I made this soup as a starter for our family Easter dinner. Everyone absolutely loved it. I followed the recipe exactly as written. The croutons were outstanding. I will definitely make this again!

    Best broccoli soup recipe I have ever made. I took the advice of other reviewers - used fat free half & half and a couple of stalks celery. I also added some ground nutmeg at the end for a little extra flavor. Delish!
