Best broccoli soup recipe I have ever made. I took the advice of other reviewers - used fat free half & half and a couple of stalks celery. I also added some ground nutmeg at the end for a little extra flavor. Delish!

Excellent. My 11 year old loves it! Only thing I suggest is I added some nutmeg at the end. The second time I made it I added two celery sticks, chopped. This recipe is fast, easy to remember in a pinch and I usually have all the ingredients on hand.

Good soup - quick and easy. The best thing about it is the croutons. I used whole grain French bread - delicious. Hadn't thought to sprinkle my croutons with red pepper flakes - a great taste.

My daughter and I have made this soup several times and taste great every time. We eat half of the soup and then freeze the rest for another night.

OMG! This is the BEST I've ever had. I used a lot of broccoli - combination of 1 1/2 stalks of fresh, a whole bag of frozen and a whole bundle of broccolini that was in the fridge. Only thing I did differently was add a large dollop of sour cream in the final whipping stage. My husband says this is going to be his favoorit of ALL soups. Says if feeds four, but barely if using large bowls and certainly people may want seconds.

So easy and SO GOOD! I set a bit aside before I add the cream for my son who has a dairy allergy. Everyone in my family loves this soup. It also freezes well... IF there are any left overs!

This is the broccoli soup recipe I've been looking for. Skipped the carrot and used frozen broccoli florets. We prefer a creamier soup and the frozen cooks up better. Do not add salt until the end. I only had regular chicken broth, not low salt today and it was just a little salty because I added some salt in the begining too. Do use a good quality broth though thats where a lot of the flavor comes through (I used 2 Knorr cubes.

I have made this soup a couple of times now and it's definitely a 'no fail' recipe. It's unbelievably fast if you follow the cooking directions - I have let it simmer away for about 30-45 more just to get the most flavor. We like a bit of texture so I leave a bit in the pot when I remove the rest to puree and use a masher to just squash the remaining broccoli up a bit. That way when you add the rest of the soup back in it gives it more a bit more texture to the soup. ***Also wanted to add that this soup freezes very well!! I put it in a freezer bag and laid flat in the freezer. Thawed in mins for a quick dinner the following week!!

I made this recipe exactly as posted. It was good, but not the best i've had. Something seemed to be missing. It wasn't bad however, but will look for another broccoli soup recipe. Don't think i'll make this one again. Btw, it yield more than four servings. I still have enough to feed about 6 people. Also,i'm not a crouton lover,but the recipe for them was pretty good. Much better than the restaurant type. sorry..
