I usually don't like broccoli, but this recipe was so good that I really enjoyed eating it. I will make it more often for sure. I used milk instead of cream and still, it was thick.

My dad makes a great broccoli soup so I wanted to see if I could find a recipe for a better soup. This recipe is just as great and does not take very long to prepare. You have to make sure to make the croutons to put in the soup. This was the extra touch that made this recipe so splendid!!

I made this as written except for using milk instead of cream, it was so delicious and easy. I can only imagine how wonderful it is with the heavy cream.

I made this vegan by cooking in coconut oil and using almond milk. I had to make myself stop eating because it was so amazing. The carrot was a great hearty addition.

I made this recipe last night and it was incredibly easy and delicious. I added about 1/2 c. parmesan and 2 cloves of garlic, so that it had a little cheesiness, but nothing over the top. My husband is a broccoli fanatic and he loved the fact that the soup actually tasted like broccoli.

So delicious! I added a garlic clove before pureeing and finished with pecorino romano. Love when something so healthy tastes so good.

Easy, Quick, Healthy, I added CRP, and 1 clove garlic used my blender.....that was it. Better than I expected.

Very nice. My family enjoyed this soup. (Didn't make the croutons I used a leek and shallot in place of the onion because that's what I had, and homemade veal stock. Also added some crushed red pepper, and garnished with a sprinkle of nutmeg.

This was good. I wouldn't say I love it but still very good. It is nice paired with a cheese sort of bread or cracker. As several people have said, it doesn't need the cheese in the soup. You don't miss it at all!
