    Yes it's a little tricky but don't blame the Neely's!...I give it 5 stars!!! It came out perfect just keep an eye on that heat...and when it calls for RmTemp they mean it! Delicious!!

    1st time I made it, the cream was cold, and the syrup had lumps, 2nd time I let the cream sit out for a while and it came out much better.. over all me, my mom, and bf LOVED IT!!!

    I saw this Show today 1/17/10 . I said to my Husband I am going to try this recipe it looks easy. It went fast I browned the sugar slowly. I had a few lumps but just tossed them out. The heavy cream should be at room tempature, mine was cold and it did make a big lump I just reduced the heat and kept stirrring and
    I didnt have any more lumps. I added the butter and vanilla delicious. I had sundae dishes but I added less toppings the caramel is sweet. My husband & I loved it.I will make this again.

    I started melting the sugar as directed in recipe, using whisk to stir. It did not melt but just turned into a saucepan full of rock hard sugar balls. I've been cooking for 35 years and have never had such a recipe disaster as this. I was unable to scrap the melted sugar from bottom of pan and though it completely ruined the pan. Maybe I'll try it again, adding a small amount of water to sugar to help melt and dissolve it.

    if you add your cream while it is too cool, or too quickly this sauce will become clumpy... and it will not whisk out either - it happened to me, I ended up just adding chopped pecans ( I already had them chopped and spead it out in a buttered cookie sheet - the second time I made it, cause I was not giving up, it worked, but my cream was room temp and I added it slowly...
    Sadly this show moves too quickly and yu do not get to see the missing steps and they do not give you the info either...
    they are a cute couple, and entertaining, but they could move a little slower, maybe make less, and it would be an easier show to follow.
    but... the sauce is very good, very sweet and made very nice carmel squares too.

    This is really delicious. You do have to be careful when you add the cream, it will sieze up slightly (a lot but if you PERSEVERE and keep up with the stirring it will turn into a great sauce

    I saw this recipe on t.v and it looked really easy when I saw the Neely's make it, but I thought wrong. I tried making this sauce 2 times and I was stricken with the same problem both times. As soon as I added the heavy cream the caramel formed a hard ball rather than being of a sauce texture. What a disaster! It would have been a waste if I had thrown away the caramel ball that I now. So I just broke it up into small little pieces and used them as toppers in my families sundaes. It was really chewy and just delicious..shows how you can make a mistake into something yummy.
