    This salad has definitely become a family staple. For a light, late supper I will add leftover grilled salmon or chicken . . . yum!

    This is a great salad and a great way to use fresh corn. I recommend using an orange bell pepper so everyone can tell pepper from tomato.

    I really enjoyed this salad. The taste was soo good. I would definetely grill the corn. It gave it a good texture. The only thing I will do next time is less aruglia and more "stuff". I am going to add onion and celery. Their seasoning makes a great vinaigrett.

    I saw this on the show and had to try it. I'm so glad I did. First, it makes a beautiful-looking salal. The yellow of the grilled corn, the red of the tomatoes and red pepper, the green of the spinach and scallions. Secondly, the hubby cleaned his plate and asked for more!! Very rare on "salad nights." Third, I know I did something good for my body by eating this. Does it get better than all that? I did cut the recipe in half, added a chicken breast and substituted spinach for arugula. We will enjoy this one again and again. Can't wait to make it for company. Thanks, Neelys!!!
