I don't usually go for a "sweet" cornbread recipe. I was surprised by how quickly these muffins were devoured. I made no changes to the recipe and actually preferred them without any additional butter spread on them. A pan of 12 muffins for a family of 3---was that enough? Not in my house. 4 stars because I still think cornbread isn't supposed to be sweet.

I made this recipe with plain almond milk and it was so amazing!! The original recipe cannot be beat, but I had to rid of milk because of some things I heard that's in it. The almond milk works just as good!!

So...I accidentally put in a stick of butter instead of half a stick of butter and they came out amazing. I used coarse cornmeal and have tried other recipes (for buttery cornbread where the texture was more crunchy. These were perfect. Not too sweet, not dry at all (thanks to my mistake and I'm sure wonderfully fattening (thanks to my mistake.I didn't have honey on hand so I only used about 1/8th of a good quality maple syrup instead. This is a keeper.

I am a true southern girl born and raised in SC. I made this today as part of our New Years Day feast and it was AMAZING!! I did not make it in muffins, but instead just poured it into a pyrex dish and baked. I give this recipe 2 thumbs up!

This recipe is very easy and the results are awesome. The texture is that of real cornbread and not a cake mix. Fluffy and moist with a crunchy top. The flavor was spot on, slightly sweet. This is my go to recipe for cornbread, no more store bought.

I found them to be a bit dry in texture, they also weren't as sweet as I expected. They were good in taste just not what I expected. They were nice and soft after they came out of oven but they eventually became hard but not to the point where it's not eatable. I feel they could be better by using buttermilk instead of regular milk and a bit more honey.

Just finished making these! The texture and sweetness is just right for me, but I found that the salt could definitely be cut in half. With 1 tsp I feel like you taste the salt more than anything. Next time I make them I will try 1/2 tsp. Not bad for making cornbread muffins for the first time.
