    These are great corn muffins when they are fresh. Not as fluffy as I generally like. A little bit more on the mealy side but still very good. Also the honey flavor doesn't shine out as much as I would like. But the muffins are still sweet while remaining savory. I've made this recipe twice now and each time I've doubled the recipe. I think next time I'll add just a touch more honey so that the honey flavor comes through a little more loudly.

    HOLY SMOKES!!! AMAZING RECIPE!!! Works beautifully in a cast iron skillet as well! This will be our new go-to recipe...skip the Jiffy mix and make this one!

    These are very good! I made them in a glass pan as corn bread and it worked great, made for Thanksgiving. However I thought they were a bit too sweet for my taste, next time I'll probably leave out the sugar and just use the honey. Oh! I also used almond milk in mine, worked just fine!

    These had a great texture. However, I doubled the honey and still thought the muffin wasn't sweet enough. To give folks a benchmark, even after doubling the honey, the muffin wasn't as sweet as Boston Market's cornbread.

    I'm giving 4 stars because for anyone that likes a slightly sweet muffin, these are very simple to make with a nice cornbread-like texture (unlike Ina's corn muffin which is really more a flour muffin with a bit of cornmeal in it

    Excellent. I used 1/2 cup corn flour and 1/2 cup white flour and increased the honey by a tablespoon. These came out perfect. I'm making multiple batches to use for cornbread stuffing for Thanksgiving.

    I too have had a hard time making corn muffins that i liked!! I used buttermilk and made them in mini muffin tins. I got 36 muffins and everyone of them were delicious. I would have made more but I ran out of cornmeal. I also use stone ground cornmeal. These were light, sweet enough and EASY!!
