This was just OK. The boxed cake mix and the jello gave it an artificial flavor that I wasn't crazy about. The strawberries macerated in cognac were the best part. If you're feeding people with unsophisticated palates, they'll enjoy it. A group of foodies probably would not.

A slice of deliciousness. SO LIGHT, MOIST AND FANTASTIC. I've never made a strawberry cake before, and I will definitely make again.

You can see pictures of my cake at my blog: jessica-thebookcook (put the www before and the dot com after. It's the May 8th, 2011 post.

    Here's a few tips:
    - I used a Duncan Hines cake mix and followed the instructions and poured all the batter into a 9 inch Spring Form circular spring form pan. I baked for about 40ish minutes.
    - I left the Spring Form pan on the cake when I poured the jello mixture on top (I left the jello in the fridge about 30 mins and it didn't get too thick, but I stirred it up again before I put on the cake
    - I put the marinated strawberries on top, and then left in the Spring Form pan overnight in the fridge
    - Before serving, I popped the Spring Form pan off, and put the home-made whipped cream on top.

    DELICIOUS!

This is now our favorite Strawberry Cream Cake for Spring and Summer. Nothing tops it! The combination of the cake, jello, strawberries and whipped cream is so scrumptious! It is also so quick and easy to make. Thank you Neelys!

I couldn't find a strawberry cake mix in any grocery store in my area, so like many others, I substituted a butter flavor white cake mix instead. I must say that this cake tastes exactly like strawberry shortcake, however.... It was way too soggy. I knew when I was pouring that cool jello liquid over the cake that it seemed like I had more than enough. Maybe using only half the amount of jello would be better because the strawberries create a juice factor of their own. Hard to even get cut cake squares out of the pan afterwards it was so saturated. It wasn't horrible, but I wouldn't make it again. It's not like this is any shortcut from just making normal strawberry shortcake and I prefer the texture of the sweetened biscuits over wet cake any day. And like the others said, 1 cup of whipped cream is not nearly enough.

My mom has been making this recipe for 35+ years for her children. She has used different flavors of Jell-O along with different cake mixes. My personal favorite is French Vanilla Cake Mix (baked as directed and cherry Jell-O. Top with fresh whipped cream (1 pint cream,1/4 Cup sugar, 1/2 tsp. vanilla ...whipped till firm peaks form. Fresh cherries never hurts either. If you don't have any, don't worry, the family will love it anyway.
