Really yummy. I bought a bag of sliced almonds and then used the mini cuisinart to grind them up. I'm sure there other other ways of grinding almonds. You don't need to use currant jelly, any jelly will work, I recommend raspberry if you can find it. The kids and adults love them. Even make some without jelly, just make cutouts and sprinkle with powdered sugar and they are sure to be snatched up.

The shortbread sandwich cookie is very tender, buttery and not to sweet.
Very easy to make . Cookies were a hit at work, everyone raved at how good
they are. Everyone is asking for the recipe! I will continue to make these cookies, they will become a part of my tradition in holiday baking.

These really did well with all my family. I even had left the dough in the frig for over a week because I couldn't get to them but they were great. I will definitely be making these again.

These cookies are beautiful! Guests at my Christmas dinner table were raving about them and asked for a recipe. I just emailed them the recipe which I used (from the Joy of Cooking cookbok
However the "Joy" cookbook calls for
1 2 1/3 cups of flour (instead of 2 1/2 and
2 to bake them at 350 in the center oven (instead at 325 at the lower third.
I wonder if this makes the cookies taste any different, but wanted to make sure it's noted.
Tip: use a plastic straw to cut out the holes! Do use the wax paper to roll the dough and have the dough in the fridge for as long as the recipe calls for it. It's so much easier to cut out the cookies! I had the dough in the fridge overnight.
