I made something similar a year ago and Dad didn't like it. This he liked. I used a total of four different cheeses, substituted Italian bread crumbs for the bread, and prosquitto for the bacon. I don't think it came out dry - everyone liked it.

My whole family enjoyed this mac and cheese, although we all agreed it was a tad bit dry. I really like the flavor of the provolone and asiago together...and the texture of the bread/bacon topping was perfect. Leftovers were just as yummy, too!

This tasty very good. It seemed just a bit dry for M&C to me. I may try more cheese next time. I had never heard of Asiago cheese but I found it and liked it.

I made the Dressed-Up Bacon Mac and Cheese last night and it was really tasty. Next time I am going to add some bacon to the macaroni mixture in addition to the bacon that was in the topping.
It was excellent right out of the oven and it heated up great too the next day!
