Dry Rub Fo Yo Chicken

4 to 6 servings

  • 2 tablespoons non-iodized salt
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon ground thyme
  • 1 teaspoon rubbed sage
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 2 whole chickens, skin removed and separated into white and dark meat parts
  • 2 cups Stonewall Barbecue Sauce, recipe follows

Mix dry ingredients together in a small bowl and rub into the chicken, making sure to get the rub into the nooks and crannies. Let rub sit on the chicken for up to 12 hours in the refrigerator.

Preheat a grill to medium heat.

Place dark meat on the grill first because it has a longer cooking time than white meat. Grill until the internal temperature of the chicken is 180 degrees F for all parts except the breasts and is 165 degrees F for the breasts when measured with an instant-read thermometer. When chicken is almost finished grilling, baste it with a generous amount of barbecue sauce all over the meat. Save any leftover sauce for dipping.

Stonewall Barbecue Sauce:

1/2 cup butter

1/2 cup cider vinegar

1/2 cup ketchup

1/2 cup lemon juice

1/2 cup Worcestershire sauce

1 tablespoon hot sauce

Combine all ingredients in a saucepan and slowly bring to a boil over medium-high heat; then reduce the heat and simmer until the sauce begins to thicken.

    I used the rub on about a dozen chicken breasts for a large group, but then just used bottled BBQ Sauce (Sweet Baby Rays. They only sat in the fridge for about 3 hours as this was a last minute thing and didn't have time to wait 12 hours. Everyone was raving how good the chicken was and asking how I made them. I would definitely use this rub again.

    We used the rub on chicken breasts that we pounded out and pan cooked. I added a little extra hot sauce to the bbq sauce and it was perfect.
    Went to a popular BBQ spot the night before, and this chicken is so much better! We used thighs and left out the sage on accident, and it was delicious. The sauce was great too...make sure to use cider vinegar.
    this review is for the Rub only-its the best rub I have used on chicken yet-not mouth burning spicy yet extremely tasty. used on my beer can chicken (also Bobby flay recipe and aside from rubbing into chicken, under chicken skin and on skin I also put a couple of spoonfuls into the beer can. And everyone was licking their fingers. I did not make the sauce as it wasn't needed.
    Horrible! The sauce was way to vinegary. It was unusable.
    I have the chicken sitting in the fridge, I can't wait to fire up the grill. I'm doing low carb, so the only adjustment i had to make was to use low carb ketchup instead of regular and leave the skin on! ty bobby flay. My son and i luv your recipes. (did one from south beach even tho i'm on atkins, and it was FANTASTIC). my son says your recipes have so much flavor!
    Being on a very low calorie diet, we are always looking for ways to impart big flavor with as few calories as possible. The dry rub alone is all we needed. Our grilled chicken for dinner salads will never be made any other way again. Our taste buds AND waistlines thank you.
    This rub is delicious. Perfect for grilling, though I would recommend cutting down the salt - probably in half.
    Began using this recipe a couple of years back and it is by far a crowd favorite. People are always asking for the recipe after trying my now famous chicken wings. I skipped the BBQ sauce and just serve with the rub. Also, I tend to adjust the recipe with different herbs and spices depending on what I have on hand but the core of the recipe is always there. Highly recommended :)
    This was the best dry rub we have ever had!!! I used it on grilled and smoked chicken... We have tried a whole bunch of other rubs but this one is going in our recipe 3 ring binder....
    Best chicken rub I've ever used. Marinating awhile definitely helps the chicken flavor. My wife wants s'more.
    This is a great recipe. I served the sauce on the side because it seemed to be pretty strong with vinegar - afraid my family would not go for it. Next time I make it, I will baste half of the meat on the grill. I think it will come out great. I found that the rub and the sauce made an amazing combination.

    I added some honey to the sauce as suggested by some - less than 1/4 cup. I was surprised that the sauce never really thickened up.

    My 15 year old son made this for dinner tonight and everyone loved it.
    I love this recipe its perfect on griiled cheicken, i also tried it on my stuffed fried chicken breast (adding 1/4 teaspoon of rosemary and oregan seperately) then mixed them with 2 tbl spoons olive oil and 1/4 tbl spoon lemon juice and brushed it on, it was perfect. Both dishes empressed my in laws, wich is a task unto itself.
    Spice rub was delicious, adds a nice crust when grilled. The bbq sauce while good on its own, provides and excellent base for your own personal bbq sauce. I added some honey, brown sugar, and shallot to mine. This sauce leans on the side of vinegar based. If you prefer a tomato based sauce, half the vinegar and add some fresh tomato.- Bobby Flay for President-

    The BBQ sauce needs a little something - if you add about a 1/2 cup of honey, it is wonderful.
    OK, I decided to use my family as guinea pigs again, and they absolutely LOVED this recipe. Even my brother loved it, and we don't talk so much anymore. HA! I made this recipe for 22 adults at our last BBQ. I had to quadruple the recipe. I do agree that there is a bit too much salt in the rub, but that can be easily fixed.

    Also, the reason for the 4 stars instead of 5 was the BBQ sauce. It really was not a good sauce recipe. Too much vinegar and it didn't thicken up very much at all. I left it out, and put a bowl of store bought sauce on the side, in case people wanted to dip. Nobody used it. hahaha!
    The taste of worcestershire overwhelms this recipe. It is more like a classic steak sauce than a BBQ sauce.

    Rub was excellent on smoked chicken....Barbeque sauce was not to my liking way to much vinegar. Suggest cutting the vinegar in half.
