    I didn't want to make even that large a recipe, so I used 1 quart of 2% milk (I normally drink 1% and 1 cup of Bulgarian buttermilk. I also added a dash of Himalayan sea salt (doesn't leave a chemical-ly flavor. This was super easy to make. After draining for 30 minutes, it was very firm, so I was glad I hadn't poured the whey down the drain as I made one of our favorite desserts & needed it a little softer.
