Ingredients

  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 1 medium onion, chopped
  • 6 cups reduced-sodium chicken broth
  • 3 pounds buttercup squash, peeled and diced (about 6 cups)
  • 1 plum tomato, chopped
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 2 15-ounce cans pinto or other brown beans, rinsed
  • 10 ounces spinach, stemmed and coarsely chopped
  • 1 lime, cut into wedges

Directions

Melt butter in a Dutch oven over medium-high heat. Add garlic, carrots and onion and cook, stirring occasionally, until the vegetables are tender and lightly browned, 5 to 7 minutes. Add broth and scrape up any browned bits with a wooden spoon. Add squash, tomato, crushed red pepper, salt and pepper and bring to a boil. Reduce heat to a simmer and cook until the squash is very soft and almost breaking apart, about 20 minutes.

Transfer 3 cups of the soup to a blender and puree until smooth. (Use caution when pureeing hot liquids.) Return the pureed soup to the pot. Stir in beans and spinach and cook over medium heat until the beans are heated through and the spinach is wilted, about 5 minutes. Serve with lime wedges.

To make squash bowls: Preheat oven to 425°F. Slice about an inch off the top of each buttercup squash. Scoop out seeds and loose flesh. Pour 1/2 inch water into a glass baking dish (or two) large enough to hold the squash. Place squash cut-side down in the water. Bake until the flesh is tender when gently poked with a knife and the squash still holds its shape, about 30 minutes.

    Perfect for that cold evening!

    I just finished making this soup and it was perfect for a cold fall evening! The easiest part of the meal was the squash. I... purchased the butternut squash already peeled and cubed from Costco! It was perfect to put into the soup and not have to cut and peel it which would have taken a lot of extra time. I suggest anyone that is going to make this soup head to Costco for the ingredients (or just the squash alone!) Good cooking! Read more

    I'm a soup lover - I eat it almost daily all year long - and this one is going to be on my favorites list. It's so pretty... (looks just like the picture) as well as being healthy and delicious. I agree with a previous reviewer that it is much easier if you microwave the squash a few minutes before trying to peel and cut it. I couldn't find buttercup squash so I used a butternut, which I microwaved for about 5 minutes to soften it. I've already raved about this soup and shared the recipe with a friend. I love the combination of ingredients - great tastes, textures, and colors. It's very filling too. This recipe is definitely a winner! Read more

    I made this soup for my family and they loved it! It is just a great combination of flavors. I will definitely make it... again! The recipe was very easy -- The only problem -- peeling that squash -- impossible. I tried every tool in the kitchen and was thinking of using a hand saw on it. I finally cooked it in the microwave for a few minutes to soften it -- then I could peel and dice. The soup is such a treat, it is worth the effort! Thanks!Read more

    great hearty soup for fall/winter

    I made this last night because I had a squash and I didn't know what to do with it. It was really, really good! I used an... acorn squash (that's what I had) and the only problem is that I have never had to skin/peel a winter squash before (I usually cook it then scoop it out of the skin). Its a pain in the you-know-what. I was hoping the soup wouldn't be that good so I would never have to do that again! Since I am definitely making this again, I think next time I will buy the butternut squash at the grocery store that is already peeled. The only other modifications I made was to use 1 can of cannelloni beans and 1 can of kidney beans (adds visual interest and I like them better than pinto) and 2 plum tomatoes instead of one. Other than the peeling of the squash, it was easy to make and delicious. Very hearty too! I only had one bowl with a piece of bread & butter and was totally full. My boyfriend loved it too and he's not a huge fan of vegetables. Read more
