Ingredients

  • 1 cup low-fat milk
  • 1 cup water
  • Pinch of salt
  • 1 cup quick-cooking oats
  • 1 very ripe banana, mashed
  • 1 tablespoon maple syrup
  • 1 tablespoon chopped walnuts

Directions

Combine milk, water and salt in a medium saucepan; heat until almost boiling. Add oats and cook, stirring, until creamy, 1 to 2 minutes. Remove from the heat and stir in mashed banana and maple syrup. Divide between 2 bowls, sprinkle with walnuts and serve.

Walnuts add omega-3 fatty acids along with an appealing crunch.

    It is SO, so simple...it really is. I'm one of those folks that MUST have a recipe in front of me to cook, even oatmeal as... basic as this. I wouldn't have thought of adding the maple syrup, but it gave that extra little oomph. Rather than 2 servings, I turned this into 3 servings. Eating about 200 cals early in the morning made more room for a nice 100 cal snack and a cup of skim milk around 10 am. (I closely monitor my calorie intake). The walnuts for this should definitely be toasted. :) Enjoy. Read more
