Ingredients

  • 1 8-ounce can reduced-sodium tomato sauce
  • 1 4-ounce can chopped green chiles, drained
  • 3 tablespoons cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon sweet or smoked paprika
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dry mustard
  • 1 teaspoon ground chipotle chile
  • 1/2 teaspoon salt
  • 2 1/2 pounds boneless, skinless chicken thighs, trimmed of fat
  • 1 small onion, finely chopped
  • 1 clove garlic, minced

Directions

Stir tomato sauce, chiles, vinegar, honey, paprika, tomato paste, Worcestershire sauce, mustard, ground chipotle and salt in a 6-quart slow cooker until smooth. Add chicken, onion and garlic; stir to combine.

Put the lid on and cook on low until the chicken can be pulled apart, about 5 hours.

Transfer the chicken to a cutting board and shred with a fork. Return the chicken to the sauce, stir well and serve.

    I used this recipe for a very large event that I was cooking for (100 people). I made this recipe x12 for it, and there was... not one bite left when they were done. Everyone LOVED it! It's not too spicy at all--as a matter of fact, I served it with extra BBQ sauce on the side because I thought it was a bit too mild without it. I also had cole slaw and dill pickle slices, as you can't have a good pulled chicken sandwich without them. I'm still getting requests for this recipe and the event I made it for was 2 months ago! I have tried this recipe with chicken breasts instead of chicken thighs, and I think it's much better with the thighs...just my preference, but I do think it makes a difference.Read more

    Very tasty, and super easy to put together. Might have given it four stars, but it is good for you and tastes good, so it... gets an extra one for that! Not sure where the spicy comments are coming from - I actually had to add cayenne the second time I made it. Be sure to put the chicken back in the sauce and let it soak for a few minutes, then use the sauce on the sandwich.Read more

    I made these last night for my fiancee and some friends. They were fantastic - and so easy too! The meat was so tender; it... just fell apart, there was no pulling necessary on my part.     Wow. Okay, triped the recipe for the first time making this. Put the ingredients in the crock pot and left for a golf... outing. Fed 30 hungry people about 8 hours later and it could not have been easier! Adjust the heat to your preference, but I double the amount of chipolte peppers.
