Ingredients

  • 3/4 cup rolled oats
  • 1 cup whole-wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup butter, softened
  • 1/4 cup canola oil
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Directions

Preheat oven to 350°F. Coat 2 baking sheets with cooking spray.

Grind oats in a blender or food processor. Transfer to a medium bowl and stir in flour, baking soda and salt. Beat butter in a large bowl with an electric mixer until fluffy. Add oil, granulated sugar, brown sugar, egg and vanilla; beat until smooth and creamy. With the mixer running, add the dry ingredients, beating on low speed until just combined. Stir in chocolate chips.

Drop the dough by heaping teaspoonfuls, at least 1 inch apart, onto the prepared baking sheets. Bake cookies, 1 sheet at a time, until firm around the edges and golden on top, about 15 minutes. Cool the cookies for 2 minutes on the baking sheets, then transfer to wire racks to cool completely.

    Followed the recipe to the letter... other than the fact that I added some pecans (my mother's only request). I even... substituted the Splenda Half and Half brown sugar blend and it worked fine. If you add nuts, cut back on the amount of chocolate chips or else you run out of dough to cement the ingredients together. No one in my family could believe these were light cookies! Definitely going to keep this recipe in my arsenal.Read more

    I used whole wheat flour and cane sugar for this recipe. I also used the big dark chocolate chips. Thanks so much for... posting this. My baby pie doesn't want me to go back to the old recipe.     I used 1/2 whole wheat flour and 1/2 white flour. I ran out of chips for the second batch so I added coconut and dried... cranberries to make my cup of goodies. I would never bake these for 15 min. I bake for 9 to 10 minutes one tray at a time. I wish we knew the calorie count???Read more

    I substituted all grapeseed oil instead of butter and the cookie came out very yummy. My husband finished it all in a day :)
