Ingredients

  • 4 slices turkey bacon
  • 1 12- to 16-ounce bag shredded broccoli slaw or 1 large bunch broccoli (about 1 1/2 pounds)
  • 1/4 cup low-fat or nonfat plain yogurt
  • 1/4 cup reduced-fat mayonnaise
  • 3 tablespoons cider vinegar
  • 2 teaspoons sugar
  • 1/2 teaspoon salt, or to taste
  • Freshly ground pepper to taste
  • 1 8-ounce can low-sodium sliced water chestnuts, rinsed and coarsely chopped
  • 1/2 cup finely diced red onion (1/2 medium)

Directions

Cook bacon in a large skillet over medium heat, turning frequently, until crisp, 5 to 8 minutes. (Alternatively, microwave on High for 2 1/2 to 3 minutes.) Drain bacon on paper towels. Chop coarsely.

If using whole broccoli, trim about 3 inches off the stems. Chop the rest into 1/4-inch pieces.

Whisk yogurt, mayonnaise, vinegar, sugar, salt and pepper in a large bowl. Add water chestnuts, onion, bacon and broccoli; toss to coat. Chill until serving time.

    I agree changes could be made.. but those changes should be made based on personal taste. In my opinion it could use 1 tbsp... MORE vinegar, and 1 tbsp LESS (or none at all) of the sugar. Its all based on personal and regional preferance I think. I used splenda as well, which I think makes it much more sweet - almost sickeningly so. I think with sugar, the 2 tbsp would have been fine. This is a great "base" recipe and if you like more or less of something, it would be very easy to work with. I dont like "sweet" slaws so next time I may add no sugar at all, but I really love the crunch of the broccoli. the salty punch from the turkey bacon, and the red onion. I didnt use the water chestnuts (my husband hates them). this is a great recipe to add and subtract from. A new favorite!Read more

    Good but Changes are Needed!

    I picked this recipe because it follows phase one of the South Beach Diet and I really needed another side dish for my meals.... I doubled the recipe and followed everything as provided, but I used Splenda instead of Sugar. One BIG change I would make next time would be to use way less cider vinegar, at most two tablespoons for a single batch. I knew how strong cider vinegar can be, but I followed the recipe anyway. One other change I would consider would be to add one more teaspoon of sugar/splenda. Read more
