Broccoli, White Bean and Cheddar Soup

Ingredients

  • 1 14-ounce can reduced-sodium chicken broth or vegetable broth
  • 1 cup water
  • 1 pound broccoli crowns, trimmed and chopped (about 6 cups)
  • 1 14-ounce can cannellini beans, rinsed
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 1 cup shredded extra-sharp Cheddar cheese

Directions

Bring broth and water to a boil in a medium saucepan over high heat. Add broccoli, cover and continue cooking until tender, about 8 minutes. Stir in beans, salt and pepper and continue cooking until the beans are heated through, about 1 minute.

Transfer half the mixture to a blender with half the cheese and puree. (Use caution when pureeing hot liquids.) Transfer to a bowl. Repeat with the remaining broccoli mixture and cheese. Serve warm.

    OK, but not a substitute for the real thing

    I made one substitution, that I used cheese made from 2% milk, which may have contributed to some of the texture problems,... but in my experience switching to low-fat cheese when it's blended in (as opposed to melted on top) usually doesn't make a huge difference (although no-fat is just gross when it melts). I agree with a previous reviewer that it ends up like ground up broccoli and beans. That being said, it taste bad at all, it just didn't taste like real broccoli and cheddar soup, which is I believe what it is meant to mimic. The bean flavor comes through pretty strongly, and even with the blending, it lacks the smoothness you would get from making a roux and adding real cream. Read more
