Ingredients

  • 1 large egg
  • 1 large egg white
  • 1 cup light brown sugar
  • 1 tablespoon canola oil
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups toasted oats
  • 2/3 cup chopped dried cranberries or golden raisins
  • 1/4 cup chopped pecans
  • 1 tablespoon all-purpose flour

Directions

Preheat oven to 325°F. Line an 8-by-11-inch pan with foil. Coat with cooking spray.

Whisk egg, egg white, sugar, oil, cinnamon, salt and vanilla in a large bowl. Stir in oats, cranberries (or raisins), pecans and flour. Spread in prepared pan.

Bake until golden brown, 30 to 35 minutes. Cool; cut into bars with a lightly oiled knife.

    Easy but a tad too sweet for me.

    Being that I've tried to cut out most of the sugar from my diet, a lot of things started to taste too sweet to me. Thus for... the normal person, the sugar level might be perfect. Four stars for my own baking results because it didn't come out as crunchy as I hoped. I added an extra 10 minutes to the baking time and the result was still chewy rather than crunchy. I may consider making this again as a party snack because i've gotten positive feedback from friends but not for myself.Read more

    Delicious alternate to average store-bought granola bar!

    I added slivered almonds, dried apricots, and chopped up a small amount of dove dark chocolate. I also toasted the slivered... almonds and rolled oats before adding them to the recipe! Delicious quick and easy to make. Next time I am going to substitute for some of the sugar with splenda or another sugar alternative.Read more

    I did a spin to make these a little healthier, in my opinion: organic coconut oil vs. canola natural fruit jams... vs. brown sugar These substitutions made the bars solid but a little chewy, they are wonderful! I also added some unsweetened chocolate, apple butter (vs. sugar) and coconut flake to a second batch. SOOO good, and sooo easy. Great as a morning-rush, grab!Read more

    Took no time at all to make and turned out great! I used craisins, raisins, a hand full of rice crispes all the toasted oats... called for in the original recipe. If you want to cut into bars you really will have to wait until fully cooled before attempting that...Read more
