Ingredients

  • 1 1/2 cups instant brown rice
  • 1 cup reduced-sodium chicken broth
  • 1 1/2 tablespoons sugar
  • 2 tablespoons reduced-sodium soy sauce
  • 1 tablespoon mirin (see Ingredient note)
  • 2 large egg whites
  • 1 large egg
  • 8 ounces boneless, skinless chicken breasts, cut into 1/2-inch pieces
  • 6 scallions, trimmed and thinly sliced

Directions

Prepare instant brown rice according to package directions.

Pour broth into a heavy medium saucepan, along with sugar, soy sauce and mirin. Bring to a boil; reduce heat to medium-low.

Stir egg whites and whole egg in a small bowl until just mixed. Add chicken to the simmering broth. Gently pour in the egg mixture, without stirring. Sprinkle scallions on top. When the egg starts to firm up, after about 3 minutes, stir it with chopsticks or a knife. (The chicken will be cooked by now.) Divide the rice among 4 deep soup bowls and top with the chicken mixture.

Ingredient noteMirin is a low-alcohol rice wine essential to Japanese cooking. Look for it in your supermarket with the Asian or gourmet ingredients. An equal portion of sherry or white wine with a pinch of sugar may be substituted for mirin.

    I added mushrooms and water chestnuts, I would recommend this. I added more broth like the other comments suggested and it... turned out pretty good. My only gripe was that it was a little bland in flavor. I don't think I will make this again.Read more

    I almost never review recipes, but this was exceptional! It was very tasty and I was able to use ingredients I already had on... hand. What I did not have on hand could be easily substituted. This would be a great weeknight meal. I did a few substitutes though. I used white rice, cooked as usual and added at the end. I used white rice wine vinegar and sugar instead of the Mirin and I added more soy sauce than it called for. I doubled the chicken broth at the advice of other reviewers. This is really yummy if you get creative with add-ins - mushrooms, carrot, celery, and ginger root were my choices. I also put some Sesame seed oil in it as well. This recipe serves as a great base recipe - be adventurous and add it whatever sounds good! Read more

    For this recipe, we did a few things differently: 1. I used white rice, and a rice cooker (which took only about 15... minutes) 2. I couldn't use Mirin, so I used the White Cooking Wine with sugar like it suggested. Overall, it was delicious! I had two other people who tried it, and they loved it as well! I reallly liked mixing all of the ingredients in with the rice and eating it that way. I would absolutely reccommend this to others - it's so easy! The only complaint that I have is that it may be good to add more chicken broth, I thought that there really wasn't enough to cover the chicken.Read more
