Ingredients

  • 1 cup packed brown sugar
  • 3/4 cup unsweetened applesauce
  • 1 large egg white, lightly beaten
  • 2 tablespoons canola oil
  • 1 tablespoon vanilla extract
  • 1 cup raisins
  • 2 cups rolled oats
  • 1 cup sifted cake flour
  • 1/2 cup whole-wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Directions

Position rack in the center of the oven and preheat oven to 350°F. Line baking sheets with parchment paper or coat with cooking spray.

Whisk together sugar, applesauce, egg white, oil and vanilla in a large bowl until smooth. Stir in raisins. Stir together oats, cake flour, whole-wheat flour, baking soda, cinnamon and salt in a medium bowl. Stir the dry ingredients into the wet with a wooden spoon, mixing just until blended.

Drop the dough by tablespoonfuls onto a prepared baking sheet, spacing cookies about 1 1/2 inches apart. Bake until lightly browned, about 15 minutes. Transfer cookies to a wire rack and let cool.

    A little dry, but yummy

    When I made the cookies, I found out at the last moment that I was out of apple sauce. I ended up substituting apple juice... and a quarter cup of chopped apple. The cinnamon and brown sugar really tie the flavor together. I added raisins and coconut to the cookies because I had it on hand. The cookies ended up tasting great, though a little dry due to my last-minute ingredient substitution. I'm definately going to use this recipe again. The only thing I don't like is the fact that the cookies harden on the top very quickly. Can someone give me a tip on storing the cookies, please?Read more

    Made a lot of substitutions and still came out great!

    These cookies are great. I substituted irish oats for regular, which I wouldn't recommend. I used chocolate chips instead... of raisins, and 1 cup of all purpose flour instead of the flour that they called for. Baked for about 15 minutes, and the cookies taste delicious! I will try next time with handrolled regular oats. Read more

    I ran out of applesauce (only had 1/4 cup left) so i put half of a peeled and diced granny smith apple in and an extra table... spoon of oil. I also didn't have any cake flour so i just used whole wheat flour instead. I ended up having to cook them for about 22 minutes. They turned out great! I would deffenitly make them again.Read more

    I really like these as a replacement for granola bars or muffins as a snack for my kids. You can omit as much of the sugar... as you want, and they are still good. And when I say "cookies" my kids want them, even though they are really just glorified oatmeal!Read more

    Too Cakey for My Taste

    Although these cookies do have decent flavour (after cutting back the sugar), I found them very cakey; not what I'm looking... for in an oatmeal cookie. I also only cooked them for 10 min which was too long - they were bordering on dry. IF I tried them again, I would definitely cut back on the flour and the cooking time.Read more

    Great healthy alternative...

    These cookies deserve 5 stars! I left out the raisins because I'm not a fan but did add butterscotch chips. They add a nice... sweetness without completly ruining the idea of a healthy cookie. I, like the others, used all purpose flour and I also baked mine for less than 15 minutes and they were nicely done. Not too gooey but still soft. Next time I think I'll take the salt down to just a dash. They were a bit too salty for me. I also thought of adding dried cranberries next time as well!Read more
