Ingredients

  • 3 large all-purpose potatoes, such as Yukon Gold or Russet (1 1/2 pounds total), scrubbed and each cut lengthwise into 8 wedges
  • 2 teaspoons extra-virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika
  • Freshly ground pepper to taste

Directions

Set oven rack on the upper level and preheat oven to 450°F. Coat a baking sheet lightly with nonstick cooking spray.

Combine oil, salt, paprika and pepper in a large bowl. Add potato wedges and toss to coat. Spread the potatoes on the prepared baking sheet and roast for 20 minutes. Loosen and turn the potatoes; roast until golden brown, 10 to 15 minutes longer. Serve immediately.

    ...but with a couple extra ingredients, they are awesome! I have been making a version of these oven fries for years, and... it's a family/friend favorite!! We love onions, so I toss the cubed potatoes with 1 sliced onion, two cloves of crushed garlic, sea or kosher salt, pepper, and cajun spice mix. I drizzle olive oil over this mixture and stir to coat. My family loves the potatoes to be crispy, so I bake until they are golden brown and crunchy. For a special treat, I'll remove from the oven about ten minutes early and sprinkle with shredded cheese. A couple of strips of crumbled bacon is a nice touch, too. And these are especially good reheated - throw them in a skillet that has been sprayed with olive oil spray, and warm through. The crispness is "refreshed" and no one would ever know they were "left overs."Read more

    The oven fries were pretty good. They seemed to lack a little flavor, but they were good in ketchup.
