Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 2 medium yellow onions, diced
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 12 ounces beer, preferably lager (1 1/2 cups)
  • 3/4 cup ketchup
  • 3/4 cup cider vinegar
  • 1/2 cup whole-grain mustard
  • 2 tablespoons tomato paste (see Ingredient notes)
  • 1 canned chipotle pepper in adobo sauce, minced, plus 1 tablespoon adobo sauce
  • 1 5-pound bone-in Boston butt (see Ingredient notes)

Directions

Preheat oven to 300°F. Heat oil in a large Dutch oven over medium-low heat. Add onions and cook, stirring occasionally, until lightly browned and very soft, about 20 minutes.

Increase heat to high; add chili powder, cumin, paprika and cayenne and cook, stirring, until fragrant, 1 minute. Add beer, ketchup, vinegar, mustard, tomato paste, chipotle pepper and adobo sauce; bring to a boil. Reduce heat to medium-low and simmer, uncovered, stirring occasionally, until the sauce is slightly thickened, 10 minutes. Meanwhile, trim all visible fat from the pork.

Remove the pan from the heat and add the pork, spooning sauce over it. Cover the pan, transfer to the oven and bake for 1 1/2 hours. Turn the pork over, cover, and bake for 1 1/2 hours more. Uncover and bake until a fork inserted into the meat turns easily, 1 to 2 hours more.

Transfer the pork to a large bowl and cover with foil. Pour the sauce into a large measuring cup or glass bowl and refrigerate until the fat and sauce begin to separate, 15 minutes. Skim off the fat. Return the sauce to the pan and heat over medium-high until hot, about 4 minutes.

Remove the bone and any remaining pieces of fat from the meat. The bone should easily slip away from the tender meat. Pull the pork apart into long shreds using two forks. Add the hot sauce to the meat; stir to combine. Serve hot.

Ingredient notesLevels of sodium in tomato paste vary from 20 mg to 290 mg per 2 tablespoons. To find the lower-sodium varieties, check nutrition labels. Boston butt (or "Boston-style butt," "fresh pork butt," "pork shoulder") can weigh upwards of 10 pounds, so you may have to ask your butcher to cut one down for this recipe.

    Made this one day when I wanted pulled pork but didn't want to go through the effort of "classic pit BBQ" cooking. This... turned out great and everyone, including the very picky kids, liked it. My dutch oven is too small for that much meat, so I made the sauce in it, then transferred it all to a large granite roaster for the baking step. I did cut back just a little bit on the cayenne for the kids' sake, but otherwise kept it pretty much "as is". A previous reviewer made an important point: use one chipotle pepper from the can, not an entire can. I froze the rest of the chiles in adobo and use them in other southwestern/Mexican dishes, as needed. I don't see how this recipe can go wrong... and your family and friends will think you slaved all day to make it!Read more

    This was extemely easy to make and absolutely delicious. I cut down on the chipolte in adobe because I find they add too... much heat. As suggested in another review, I also added 1/4 cup of brown sugar I loved this recipe and my boyfriend is asking me to make it again. This recipe is a winner.Read more

    I made the recipe just as it was presented (kinda). I started with 20 pounds of pork and what I did was break the sauce down... so I had a mild style and a hot style. This is a super easy recipe and well worth the time spent in the kitchen. I found that an hour and 20 minutes was perfect time after cover was removed from dutch oven. Enjoy!Read more

    Best Pulled Pork I have ever made!

    This was so delicious that I have made it twice in ten days! My whole family loved it...and that is saying A LOT. I did... adjust cayenne down to 1/2 teaspoon. I'm from Louisiana and know that it can add too much heat. Even my little seven year old didn't complain about it being too hot. Just right! Just a thought for those who may think it's too hot. Remember that about 8 chipotle peppers come in a can and this recipe only calls for one! I freeze the rest. I will definitely keep this as one of my favorites! Read more
