Ingredients

  • 2 teaspoons canola oil
  • 1 clove garlic, minced
  • 1 1/2 cups corn kernels (from 3 ears)
  • 1 large ripe mango (about 1 pound), peeled and diced
  • 1 15-ounce or 19-ounce can black beans, rinsed
  • 1/2 cup chopped red onion
  • 1/2 cup diced red bell pepper
  • 3 tablespoons lime juice
  • 1 small canned chipotle pepper in adobo sauce (see Ingredient Note), drained and chopped
  • 1 1/2 tablespoons chopped fresh cilantro
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt

Directions

Heat oil in a large nonstick skillet over medium-high heat. Add garlic and cook, stirring, until fragrant, about 30 seconds. Stir in corn and cook, stirring occasionally, until browned, about 8 minutes. Transfer the corn mixture to a large bowl. Stir in mango, beans, onion, bell pepper, lime juice, chipotle, cilantro, cumin and salt.

Ingredient Note: Chipotle peppers are smoked jalapenos with a fiery taste that are canned in adobo sauce. Look for them in the Hispanic section of large supermarkets and in specialty stores.

    I used this recipe as a side dish and salsa for fish tacos - it was a hit! I only used one chipotle pepper - probably could... have added more, since my husband and I like heat - but the flavors were really balanced. We could taste each individual ingredient without having one overpower everything else. Great dish!Read more

    I loved this recipe, but would suggest being careful with the Chipotles. I'm not sure what a 'small' can is, but I used 7 oz... size (the smallest I've seen), only diced up four peppers out of the entire can, and salad was still a little hot. I'd just recommend adding just two peppers at a time until you find the right heat for you. Especially if you have small kids that don't like the heat. Otherwise, truly delicious dish. I highly recommend it as a fun side for summer dinners.Read more

    I tried this recipe for the first time for a company potluck this afternoon and it was a smash hit. The theme of the potluck... was Cinco De Mayo so the dishes had to be Hispanic and I came to the foodnetwork.com and saw this recipe.
