Tilapia Corn Chowder

Ingredients

  • 2 ounces bacon (about 2 slices)
  • 1 teaspoon canola oil
  • 1 stalk celery, diced
  • 1 leek, white part only, halved lengthwise, rinsed and thinly sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 4 cups reduced-sodium chicken broth
  • 8 ounces Yukon Gold potatoes, diced
  • 2 cups fresh corn kernels (about 4 ears)
  • 1 1/2 pounds tilapia fillets, cut into bite-size pieces
  • 1 teaspoon finely chopped fresh thyme
  • 1 cup half-and-half
  • 2 teaspoons lemon juice
  • 2 tablespoons chopped fresh chives (optional)

Directions

Chop bacon and cook in a large Dutch oven over medium heat until crispy, 3 to 4 minutes. Drain on paper towels.

Add oil to the pan. Add celery, leek, salt and pepper and cook until the vegetables just begin to soften, about 2 minutes. Add broth, potatoes and corn. Bring to a gentle simmer. Cook until the potatoes are just tender and the corn is cooked through, about 8 minutes. Stir in tilapia and thyme; return to a gentle simmer. Cook until the tilapia is cooked through, about 4 minutes more. Remove from the heat.

Stir in half-and-half, lemon juice and the reserved bacon. Garnish with chives, if using.

    Everyone in the family loved it. Easy to make. Only thing keeping me from posting 5 stars was that it was a little thin or... runny for me. Maybe next time I will add some flour or potatoes to thicken up. Read more

    Easy recipe, I added more potatos, corn & fish to make thicker. Also added 2% milk instead of half & half - about 2/3 cup, 1... tablespoon of butter and 1 tbs of flour and used an imersion blender real quick to break up some of the potatos & corn before I put in fish. Oh, I also added bacon when I added potatos to get the taste in earlier. Very good and maybe not as fattening as clam chowder (?)Read more

    I've been asked many times to make this recipe since it first debuted at my party. The first time I made it I was afraid... there was too much fish, but it was perfect. The only thing I do different is use canned creamed corn and perhaps add more thyme. I've tried it with fat-free half-and-half (I'm all about low fat... although fat-free half-and-half is an oxymoron) and it was a bit sweeter and thinner, but it worked ok.Read more

    I had read one of the previous ratings where the author indicated that the chowder was a little too light, so I added more... corn, more potatoes, and more fish. I also added 3 table spoons of flour to the recipe, which helped thicken the chowder. Finally, I added more salt and pepper than was originally indicated in the recipe. When I was finished I had a thick fish corn chowder that my husband loved. If I hadn't added the salt and pepper, and flour, the chowder would have been too thin and very bland. Great recipe, but needed a little adjustment. Read more
